Squeeze and filter lemons
Squeeze the lemon juice and be sure to strain it through a fine sieve or cheesecloth. Any pieces in the juice would block the tap and spoil the smooth mouthfeel.WINKY Hack: Thyme syrup is easy to make yourself: Boil equal parts water and sugar and let fresh thyme steep in it for 20 minutes. -

Mix the aperitif base
Pour the limoncello, dry white wine, strained lemon juice, and thyme syrup directly into the 2-liter keg. Stir briefly with a long spoon to gently combine the ingredients.WINKY Hack: Since the carbon dioxide is added later, a still white wine is ideal here and much more practical than sparkling wine, which would simply overflow when poured. -

Balance and cool with water
Now add the still water to reach exactly the 2-liter mark. Seal the keg tightly and refrigerate for at least 3 to 4 hours.WINKY Hack: Cold is the key to perfect effervescence! The colder the liquid, the more sparkling the drink will be after dispensing, as the CO2 binds better. -

Carbonate & Serve
Connect the CO2 cartridge to inject the Spritz into the drink. Fill large, bulbous wine glasses generously with clear ice, pour the drink fresh, and garnish with a sprig of thyme and a lemon slice.WINKY Hack: Briefly clap the thyme sprig between your palms before garnishing – this breaks open the fine cells and immediately releases the essential oils.
