Squeeze and filter lemons
Squeeze the lemons and be sure to strain the juice through a fine-mesh sieve or coffee filter. No pieces of pulp should remain in the juice so that the drink is perfectly clear and flows smoothly.WINKY Hack: Peel off some of the peel beforehand to make zest and store it in an airtight container in the refrigerator for later decoration. -

Mix base
Pour the dry gin, the fine lemon juice, and the hibiscus syrup directly into the 2-liter keg. Stir gently with a spoon until the syrup is well combined with the other ingredients.WINKY Hack: The hibiscus syrup already provides enough sweetness – taste the base briefly before adding the water. -

Refill & Cool Down
Pour exactly 1 liter of still water into the base (up to the 2-liter mark). Seal the container and let the cocktail chill in the refrigerator for several hours until it's thoroughly ice-cold.WINKY Hack: The colder the liquid, the better and more finely bubbled the carbon dioxide will later bind to the drink. -

Boil & Serve
Once the drink is ice-cold, carbonate it with CO2. Fill highball glasses generously with clear ice cubes, pour the sparkling Hibiscus Gin Fizz fresh and garnish with a lemon zest or flower.WINKY Hack: Squeeze the oils from the lemon zest just above the glass – this gives the drink a fantastic first aroma!
