Filter citrus juice
The yuzu juice (or lime/lemon alternative) must be strained through a fine-mesh sieve or coffee filter. No pulp residue should remain in the juice so that the tap remains clear and the drink looks clear.WINKY Hack: If you are using fresh cucumbers instead of syrup, juice them and also pass the juice very finely, but then adjust the elderflower syrup slightly for the necessary sweetness. -

Aromas combine
Pour the strained yuzu juice, cucumber syrup, elderflower syrup, and a tiny pinch of sea salt into the 2-liter keg. Stir briefly with a bar spoon.WINKY Hack: The salt does not make the drink salty, but acts as a natural flavor enhancer for the citrus and cucumber notes. -

Pouring & Cooling
Fill the keg with 1250 ml of still, cold water exactly to the 2-liter mark. Seal tightly and chill completely in the refrigerator for at least 3 hours.WINKY Hack: The colder the still water and the keg are, the more CO2 the liquid can absorb later – for a more intense fizz! -

Sparkling & Serving
Pressurize the ice-cold keg with a CO2 cartridge. Fill a highball glass completely with ice cubes, pour in the mocktail, and garnish with a long cucumber strip (cut with a vegetable peeler) and a sprig of mint.WINKY Hack: Before decorating, briefly tap the mint on the back of your hand. This breaks open the fine cells and releases the full aroma immediately.
